Summer Pesto P.E.I. Mussels

Servers 2 People

Ingredients

  • 2oz Olive Oil
  • 24 Mussels (Cleaned)
  • 1 Medium White Onion (Julienne)
  • 1/3 Cup Banana Pepper Rings
  • 1 Cup Basil Pesto

Cooking
Start with a Hot Sauté Pan on medium high heat. (Or put on your grill)  Put your oil in and sauté Mussels for about 2-3 minutes. Add your Onions and sauté down for another 2 minutes. Put in the banana peppers and pesto. Toss together and cook until mussels are open, approximately 3 more minutes.
