Summer Pesto P.E.I. Mussels

Ingredients
- 2oz Olive Oil
- 24 Mussels (Cleaned)
- 1 Medium White Onion (Julienne)
- 1/3 Cup Banana Pepper Rings
- 1 Cup Basil Pesto
Cooking
Start with a Hot Sauté Pan on medium high heat. (Or put on your grill) Put your oil in and sauté Mussels for about 2-3 minutes. Add your Onions and sauté down for another 2 minutes. Put in the banana peppers and pesto. Toss together and cook until mussels are open, approximately 3 more minutes. |
