Apple, Cinnamon Pancakes

  • 2/3 c Flour
  • 2T sugar
  • 1/4t salt
  • 4 large eggs beaten
  • 1/2c milk
  • 2cs Apples, Sliced
  • 3/4c butter
  • 2T sugar
  • ¼ t Cinnamon

Method

Sift Together the flour, 2t sugar and salt, Beat Eggs and milk together, gradually add flour mixture: beat until smooth, Sauté Apples with butter till tender. Mix 2 T sugar and cinnamon together and toss with apples. Melt 1T butter on a griddle or non stick pan. Pour about ¼ inch depth of batter. When set place ¼ of the apples on top and flip till a nice golden brown is achieved on both sides.
